Gracious Living Raw Mango Ginger Torte

 (Nicaraguan version)

So easy. So good. So good for you. This is always a crowd pleaser…guaranteed!

CRUST

2 cups prunes (you can also use raisins) 2 cups walnuts (you can also use almonds) 2 tbsp chia seeds

HEALTHY ICING 

1 cup raisins (you can also use dates–remove the pits and soak them to soften for 1 hour)) 1/2 mango *Optional: add finely chopped ginger to taste

In a food processor, combine raisins, walnuts, chia seeds and blend for a few minutes until moist. It will start to form a ball and have a fudge-like consistency. Spread into a cake pan or circular plate to form the crust about 1inch thick.

In a food processor, combine raisins, mango, ginger until smooth and creamy. Spread the mango frosting on top of the torte. You can eat right away but it will be a little mushy (but still delish!) Refrigerate or freeze (which I prefer) to make it more solid and easier to cut. Once frozen, run a big knife under hot water first to make it easier for cutting.  If you want to thaw and soften, just wait about 10 minutes.
