Gracious Living Creamy Coconut Pea Soup



**Split peas are an excellent low fat, plant-based source of protein, folate and fiber, and very affordable to buy, too!


Soaking peas overnight in water shortens their cooking time. Unsoaked peas take from 1 to 2 hours of simmering; soaked peas take about 40 minutes.

  1. Split peas absorb lots of water as they cook, so check the soup often and add liquid as needed.

  2. The peas only need to be cooked until they are tender. But if you like a smoother, creamier texture, cook them longer until they soften and fall apart.

  3. If you like really silky soup, take the extra step of pureeing the peas once they have softened.

Gracious Living Creamy Pea Soup

2 cups cooked split green peas or yellow peas 1 cup squash or pumpkin 1/3 onion Fresh garlic to taste 1 tbsp soaked chia seed paste 4-5 cups sulphite-free coconut milk Handful parsley, or herb of your choice Sea salt to taste Cayenne pepper to taste

Boil split green peas until soft. Add chopped squash and onions until soft.  Transfer to blender and add remaining ingredients (add garlic and parsley raw). Blend till smooth. Garnish with finely chopped parsley.

So easy! Hearty, high protein, nutritious soup. MMMMMMMMMMMMmmmmmmmmm.
