Gracious Living Banana Coconut Curry Dressing

I’m in Nicaragua living in a pimpin’ tree-house in the rain forest. The closest town is 30 min away, but the town for the best groceries is 1.5 hours a way. So I’m a little isolated and can only get groceries once a week., but that’s okay. I love it and I get to live with the monkeys (no joke there is one on the ledge of my freaking deck right now!! Should I be scared??!!!)  The ocean is nearby and I get to do yoga on this stunning ocean deck everyday. I get to teach people all the things I love and believe in. Yep, life is great. What was I talking about again? Oh yeah…..so I live in a tree-house and can’t always get the ingredients I want and have to make do with what I have. This allows me to be creative and still be healthy with what I’ve got.

Gracious Living Banana Coconut Curry Dressing

Ingredients:

  1. 1 ripe banana

  2. 2 tbsp organic coconut oil (or handful of fresh/shredded/unsweetened coconut)

  3. Curry powder, or turmeric powder

  4. Dash of sea salt

  5. A cove of garlic

  6. Juice of 1 fresh lime

  7. Water to desired consistency (For a salad dressing you can use more, for a sauce over steamed veggies or brown rice you should make it a bit thicker)

BLEND all ingredients till smooth & creamy. Enjoy! (I can see the monkey’s gathering on my balcony now).

Variation: If you can’t get fresh coconuts, try using my favourite brand of coconut oil (as seen above), and when buying coconut oil always make sure it is organic so they don’t add any other hydrogenated oils to it.
